Delicious chunks of fish in a creamy coconut madras sauce.

350g cod fillets - cut into thick strips
50g Creamed coconut
1 jar Sharwood's Madras
1 Tbsp fresh coriander leaves to garnish
Cooking Method
Place cod in a pan with the coconut, pour over sauce.
Simmer, uncovered for 5-10 minutes, until cod is just cooked.
Garnish with chopped coriander or toasted coconut for a real treat.
