Cauliflower And Celery Korma

1` onion - chopped
2 Tbsp vegetable oil
1 garlic clove - finely chopped
75g cashew nuts
1/2 jar Sharwood's Korma Curry Paste
1 medium cauliflower - cut into florets
3 sticks celery - chopped
300ml water
50g Creamed coconut
4 Tbsp water
null Salt and Pepper - to taste
1 Tbsp fresh coriander - chopped to garnish
Cooking Method
Fry the onion and garlic in the oil until soft. Add the cashew nuts and curry paste. Cook for a further minute. Add the cauliflower florets and celery and fry until coated with paste. Add the water, bring to the boil and cover. Allow to simmer for approximately 15 minutes until the vegetables are quite soft. Blend the coconut block and 4 Tbsp water together until smooth. Add to the vegetables, heat through and season to taste. Garnish with chopped coriander and serve with Naan bread or Basmati rice.
