Pork Vindaloo
Pork and potato combine with pungent spices to create the classic dish from Goa.

1 onion - diced
1 Tbsp vegetable oil
350g (12oz) pork fillet - sliced thinly
2 medium sized potatoes - peeled and coarsely chopped
1 jar Sharwood's Vindaloo Sauce
Cooking Method
Fry the onion in the oil until just beginning to brown. Add pork and fry for three to five minutes. Add potatoes. Pour over sauce and cook for twenty to twenty-five minutes until the pork is just cooked and the potatoes tender. Garnish with chopped coriander. Serve with Sharwood's Naan Bread and Sharwood's Green Label Mango Chutney.
