Stir-Fried Courgettes (Pud Korjet)
This is a different style of cooking courgettes. It is a healthy dish you can eat on its own as a light lunch or part of the main meal.

Shopping list
2 Tbsp cooking oil
1 Tbsp chopped garlic
3 large courgettes, cut into 3-4 cm chunky batons
2 eggs, lightly beaten
2 tsp ground black pepper
2 Tbsp Sharwood’s Thai Chilli Sauce
2 Tbsp Sharwood’s Light Soy Sauce
1Tbsp coriander stems and leaves, chopped
Cooking Method
• Heat 1 Tbsp oil in the frying pan, add garlic and fry until light brown.
• Add courgettes, cook for 2 minutes.
• Push courgettes to one side of the pan, away from heat.
• Heat remaining oil in the pan, add beaten eggs, mix courgettes into the egg.
• Add Chilli, Soy Sauce and coriander, mix well
• Serve immediately
