Hoi Sin Duck Noodle Salad
The classic combination of shredded duck and Hoi-Sin works well with egg noodles to make a summer salad, try replacing egg with rice noodles

2 blocks Sharwood's Medium Egg Noodles
2 roasted duck portions - shredded
1/3 cucumber - cut into batons
2 sticks celery - cut into batons
Dressing:
4 - 6 spring onions - sliced
2 Tbsp olive oil
6 Tbsp Sharwood's Hoi Sin Sauce
Garnish:
1 Tbsp sesame seeds - toasted
Cooking Method
Cook the noodles as back of pack instructions, rinse under cold running water, drain and cool.
In a bowl, toss together the noodles, duck, cucumber, celery and spring onions.
Mix together the dressing ingredients and pour over the salad ingredients, toss well to coat evenly.
Sprinkle over sesame seeds and serve immediately.
