    2 bundles Sharwood’s rice noodles
    ΒΌ large cucumber
    1Tbsp freshly chopped mint
    1 small red chilli - finely chopped
    1Tbsp freshly chopped coriander
    2 Tbsp Sharwood's Light Soy
    2 portions salmon
    1 sachet Sharwood's Thai Sweet Chilli & Herb Coating Sauce
    6 BBQ skewers / sticks
    1-2 Tbsp salted peanuts - roughly chopped

    Cooking Method

    Cook the rice noodles as back of pack instructions, rinse under cold running water, drain and cool.

    Deseed the cucumber and cut into ribbons with a potato peeler.

    Combine the noodles, cucumber, mint, coriander, chilli and light soy sauce.

    To make the kebabs, cut the fish into chunky bite size pieces place in a bowl and coat with the sauce.

    Thread the fish onto the skewers.

    Place under a moderate grill, turning occasionally for 5-7 minutes,
    or until cooked, alternatively cook on the BBQ.

    Serve the kebabs with the noodle salad, garnished with chopped peanuts.
