Roasted Chicken Wrapped in Bacon with Spicy Szechuan and Tomato Sauce

8 rashers streaky bacon
4 skinless and boned chicken thighs
1 Tbsp oil
1 jar Sharwood's Spicy Tomato Szechuan
Cooking Method
Preheat the oven to fan 170ºC, conventional 190ºC, Gas Mark 5.
Cut streaky bacon in half.
Slice each chicken thigh into 4 thick strips.
Wrap half a slice round the middle of each chicken strip.
Place the wrapped chicken onto a lightly oiled baking dish, bake for 30 minutes or until the chicken is cooked and lightly browned.
Heat the sauce in a pan, arrange chicken on a warmed serving dish, and pour over the sauce, garnish with fresh coriander.
