Chicken cooked in a rich spicy sauce, with roasted spices, tomatoes and cumin seeds

Shopping list
1 Tbsp vegetable oil
3-4 chicken breasts - cubed
1 jar Sharwood's Madras
1 Tbsp fresh coriander - chopped to garnish
Cooking Method
Heat the oil in a pan.
Add the chicken and stir-fry for 3 minutes.
Stir in the sauce, cover and simmer for 15 minutes, or until the chicken is cooked.
Serve immediately garnished with chopped coriander.
