Pork and Aubergine with Black Bean and Red Pepper
Succulent pieces of pork and soft aubergine combine well with the earthy flavours of black bean and green peppers. For the best flavour cook the pork and aubergine in a griddle pan, or alternatively grill.

Shopping list
350g pork fillet - thickly sliced
3 baby aubergines, thickly sliced lengthwise or 1 medium sized aubergine thickly sliced
4 Tbsp olive oil
1 jar Sharwood's Black Bean & Red Pepper
Cooking Method
Preheat griddle until smoking hot.
Cook pork fillet for 2-3 minutes each side, or until just cooked, then keep warm.
Brush the aubergine with oil, cook on the griddle for 2-3 minutes each side until soft.
Heat the sauce through in a pan, add pork and aubergine, combine together, serve immediately.
Garnish with fresh coriander.
