Shopping list
1 onion - finely chopped
1 Tbsp vegetable oil
2-3 chicken breasts - cubed
1 jar Sharwood's Madras
3 tomatoes - quartered
1 Tbsp fresh coriander - chopped to garnish
Cooking Method
Pre-heat oven to fan 160ºC, conventional 180ºC, Gas Mark 4.
Fry the onion in the oil until just starting to brown, add the chicken and fry for 3-5 minutes.
Place the chicken and onion in an ovenproof dish, pour over sauce, cover and cook for approx 30 minutes.
Add the tomatoes and continue cooking for 15 – 30 minutes or until the chicken is cooked.
