Vegetable Biriyani
Biriyani is a restaurant favourite, this is a quick easy to prepare version of the classic dish.

Shopping list
175g (6oz) cauliflower - divided into small florets
110g (4oz) green beans - halved
1 onion - thinly sliced
1Tbsp vegetable oil
110g (4oz) mushrooms - sliced
1 jar Sharwood's Balti Spice Blend
1 pouch Sharwood's Simply Basmati Rice
1 Tbsp Fresh coriander - chopped
Cooking Method
Plunge cauliflower into boiling water, cook for 4 minutes, add the beans and continue cooking for another 2 minutes, drain. Slowly fry the onion in the oil until golden brown and crispy, remove from the pan, drain and leave to ‘one side’ for garnish. Add the mushrooms to the pan, stir-fry for 2 minutes.Stir in the spice blend, add the cauliflower, green beans and rice. Stir-fry for 2 minutes or until all the ingredients are heated through. Garnish with the crispy sliced onion and fresh coriander leaves.
