Thai Mussels
A delicious mild fragrant dish flavoured with herbs, lemongrass and coconut.

1kg (2 1/4lb) mussels
1 jar Sharwood's Thai Spice Blend
200ml (1/3 pint) coconut milk
2 Tbsp coriander - chopped to garnish
1 Lime - freshly squeezed juice
Cooking Method
Wash mussels under running water. Scrape off any barnacles and dirt. Place the spice blend and coconut milk in a large pan. Bring to the boil. Add the mussels, toss in the sauce, cook for three to five minutes, shaking the pan occasionally until mussels open. Add coriander and lime juice. Transfer to warmed dish. Discard any broken or unopened mussels. Delicious served with rice or Sharwood's Egg Noodles. This dish is equally delicious with mixed seafood, clams and green prawns.
