Chick Pea and Aubergine Tikka
Pieces of roasted aubergine and chick peas in a rich spicy sauce.

2 aubergines - cut into 2.5cm (1") cubes
2 Tbsp vegetable oil
1 jar Sharwood's Spicy Tikka Masala
1 x 400g can chick peas - drained
Coriander- chopped to garnish
Cooking Method
Preheat oven to fan 180°C / conventional 200°/ gas 6.
Put aubergine into a roasting pan, add oil, making sure the aubergine is well coated.
Bake for 30 minutes or until aubergine is soft.
Place the aubergine, chick peas and sauce in a pan, simmer for 5 minutes or until all the ingredients have heated through.
Sprinkle with chopped coriander and serve immediately.
