Lobster in Black Bean Sauce

700g Cooked lobster
2 Tbsp vegetable oil
4 spring onions - chopped
3 Tbsp water
1 tsp Sharwood's Sweet Chilli Sauce
1 jar Sharwood's Black Bean
Cooking Method
Chop the Lobster through the shell to managable sized pieces, removing the inedible grey gravel sac which is situated behind the eyes and legs. Smash the claws. Heat a wok, add the oil, when hot add the spring onions, briskly sir-fry for a minute. Add the lobster, water, black bean and chilli sauce. Stir-fry over a high heat for 2-3 minutes. Cover and simmer for 5 minutes or until the lobster is heated through. Adding more water if necessary to prevent sticking. Serve immediately.
