Braised Scallops in Oyster Sauce
Braised Abalone in Oyster Sauce is traditionally served as part of the Chinese New Year Banquet. It is difficult to obtain fresh Abalone in this country. The canned variety is also difficult to find and very expensive.

¼ tsp shredded ginger
½ tsp garlic - finely chopped
1 Tbsp vegetable oil
225g mushrooms - quartered
450g scallops - sliced
450g fresh spinach - blanched
1 bottle Sharwood's Oyster Sauce
Cooking Method
Stir-fry the ginger and garlic in the oil for a few seconds, without browning. Add the mushrooms, stir-fry for 2-3 minutes. Add the sliced Scallops and spinach, stir-fry for a further 2 minutes. Stir in the Oyster Sauce, continue stir-frying for a further 3 minutes, or until the Scallops are just cooked. Serve immediately.
