Vegetable Pilau
A vegetarian rice dish, which is delicious served as part of an Indian meal.

1 Tbsp vegetable oil
1 small onion - diced
50g (2oz) green beans - halved
1 very small red pepper - thinly sliced
50g (2oz) mushrooms - diced
1 pouch Sharwood's Simply Pilau Rice
1 Tbsp Fresh coriander leaves
Cooking Method
Fry the onion in the oil, over a low heat until the onions are soft and just beginning to brown. Add beans, pepper and mushrooms, continue frying for 3 minutes. Add the rice and stir fry with the vegetables for 2 mins until all the ingredients are heated through. Season to taste and serve garnished with a handful of chopped coriander leaves.
