Vegetable Malabar
The sweet flavours of red onions and squash enhance the delicate, mild flavours of Sharwood's Malabar Sauce.

1 Large red onion - roughly chopped
1 large Kabocha/butternut squash - cut into large chunks
1 Tbsp oil
1 jar Sharwood's Malabar Sauce
1 Tbsp Coriander- chopped to garnish
Cooking Method
Place the squash and onion in a baking tin. Drizzle over the oil and toss well to coat the vegetables. Roast in a hot oven 200'C for twenty-five to thirty minutes until the squash is just cooked and the onion starts to brown. Empty sauce into a pan. Add vegetables and heat through. Stir in coriander and serve immediately with Sharwood's Naan Bread. Try replacing the squash nut with sweet potato or pumpkin for a truly tasty alternative.
