Vegetable Aloo Gobi
A medium spiced potato and cauliflower curry.

Shopping list
1 onion - diced
50g (2oz) Sharwood's Vegetable Ghee
3 tbsp Sharwood's Rogan Josh Curry Paste
350g (12oz) potatoes - peeled and coarsely chopped
1 small cauliflower - cut into florets
1 Tbsp coriander - chopped to garnish
1 small (230g) can chopped tomato wedges to garnish
salt - to taste
Cooking Method
Fry the onions in Ghee until golden brown. Stir in the paste and chopped vegetables and mix well. Add tomatoes and stir fry for 1 minute. Bring to the boil, cover and simmer for 20 minutes or until cooked. Garnish with fresh coriander leaves
