Tikka Crusted Seafood
Succulent pieces of fish, chargrilled in a lightly spiced marinade with ginger slivers.

3 Tbsp Sharwood's Tikka Paste
4 Tbsp natural yoghurt - full fat
5 cm (2") fresh ginger - finely chopped
450g (1lb) salmon fillets - cut into thick strips
4 lemon wedges - to garnish
Cooking Method
Mix paste, yoghurt and ginger in a large bowl. Add the cubes of fish and coat thoroughly. Leave to stand in the fridge for at least an hour. Thread the marinated fish onto 4 pre-soaked wooden (allow to stand in cold water for 10minutes), or metal skewers and barbecue for 8-10 minutes turning once, until charred on the outside and tender inside. Garnish with lemon wedges. Also suitable for any other firm white fish, king prawns, chicken breast fillets, or lamb fillets.
