1 x 400ml can coconut milk
2 chicken breasts - sliced
5 slices galangal
2-3 red chilli - finely chopped
2 green chillies - chopped
3 Kaffir lime leaves
1 x 227g can bamboo shoots - drained
2 Tbsp Sharwood's Light Soy Sauce
1 - 2 Tbsp lemon juice
Cooking Method
Place the coconut milk iin a saucepan, fill the empty can with cold water and blend this with the coconut milk in the pan. Bring to the boil. Add chicken, galangal, chillies and lime leaves. Simmer on a low heat until the chicken is just cooked. Add the bamboo shoots and soy sauce and heat through. Remove from the heat. Season with lemon juice. Adjust taste accordingly. The soup should be mildly pungent and aromatic with a good balance of sharpness and savouriness.
