Spinach and lentil jalfrezi

Shopping list:
2 Tbsp vegetable oil
1 can (300g) green lentils, rinsed & drained
1 small onion diced
110g button mushrooms quartered
1 jar of Sharwood's Jalfrezi Cooking Sauce
150g spinach leaves finely shredded


Method:
1) Heat the oil in a wok or deep-sided frying pan.
2) Fry the onion and mushrooms in the oil for 4-5 minutes until just soft.
3) Add the lentils and continue frying for 5 minutes.
4) Add the sauce and simmer for 5 minutes.
5) Just prior to serving, add in the spinach, stirring gently until the spinach has wilted.
